Multi-grain Strawberry Pancakes



5 Over ripe Strawberries, cut into small pieces
1 Cup Hungry Jack Wheat Blends pancake mix
3/4 cup water                  1 Tbsp Vanilla extract
1/4 Brown Sugar                 1/2 cup Quick Oats


  1. Pre-heat pan or griddle to a notch below medium heat.
  2. Mix strawberries, brown sugar, vanilla, and water together in a medium size bowl.
  3. Add the pancake mix, stir until no clumps, add quick oats, allow to sit for 2 minutes.
  4. Grease pan or griddle, cook for at least 3 1/2 minutes.



Suggested Toppings:
peanut butter - Jared's favorite
nutella - Johnny's favorite
blueberries
powdered sugar

Aunt Becky's Chicken and Rice Casserole





1 lb chicken breast or 1 can chicken breast                           
1 box chicken flavor rice a roni (generic is okay)
2 cans cream of mushroom soup
2 tbsp butter or margarine
Preheat oven to 375

1. If you are using chicken breast boil it until cooked through, remove from broth and allow to cool slightly, set broth aside.  Once cool enough to handle cut chicken into small chunks.
2. Prepare the rice a roni as instructed on the box using the broth instead of water listed/if using can chicken drain the chicken and just use water.
3. In a large corning ware/pyrex combine all ingredients, mix until cream of mushroom is combined throughout.  Cover and bake for 30 minutes or until it bubbles, remove top and bake for 5 more minutes. Remove and allow to sit for 15 minutes before serving.


Notes:
4 servings, lg corning ware, 30/5 minutes baking time
8 servings, 9x13 glass pan, 38/7 minutes baking time
12 servings, roasting pan, 45/10 minutes baking time (shown above)

You can use low sodium soup and rice a roni, but it will be bland.
You can also add 2 drained cans of sliced mushrooms.

Eggs in a Bagel Basket

Eggs in a Bagel Basket






You will need a griddle and

2 eggs, separated into bowls or cups
1/2 stick butter or margarine
1 bagel of choice
1/4 cup shred cheese of choice



  1. Heat griddle medium heat, about 3-5 minutes and open the bagel.
  2. Use 1 pat of butter or margarine to grease the griddle, turn heat down by one notch.
  3. Place bagels inside down on the griddle to get golden brown, remove them and set aside.
  4. Use 1 pat of butter or margarine if needed to grease the griddle, pour on egg whites, place the bagels in the egg whites insides down.
  5. Fill the bagel holes with the egg yolks, allow to cook for 2 minutes or until whites aren't runny. *If you want over hard pop the yolk or just slosh it around in its container before pouring.
  6. If needed use a pat of butter or margarine to grease the griddle then flip the bagels * if you want over hard lift the bagel up a bit for it to cover the outside of the bagel* and allow to cook for 1 minute for over easy, 2 minutes for over hard.
  7. Sprinkle egg white side while cooking yolk side with cheese and allow to melt.

This goes really well cut up over a bed of spinach.  I ate nothing but eggs in basket for over a week trying to perfect this recipe.  I hope you like it.

Spicy Garlicy Goodness Chicken and Rice

1lb chicken (cubed)
6 tsp butter or margarine
1 Tbsp minced garlic
1 tsp black pepper
1/2 tsp ground Cummings
1/2 tsp ground red pepper
3/4 cup water
1 cup minute rice

1. In a work or deep skillet, on medium heat, place butter, garlic, cumin, black and red pepper. Allow the butter to melt, add chicken.
2. When chicken is cooked through add the water and allow to boil.
3. Add rice and cover, turn burner off, allow to sit for 6 minutes, stir, allow to sit for another 4 minutes.

Cheeseburger Pie (redneck quiche)

1 lb. ground beef                                              1 large onion chopped

½ cup Baking Mix                                           1 cup milk

2 eggs                                                                1-2 cup shredded cheese

 

 

Ø Preheat oven to 400°, grease a 9x13 pan

Ø Brown ground beef with the onion, drain, place in pan, and cover with cheese.

Ø In a small bowl mix egg, milk, and baking mix until no lumps remain, pour over beef and cheese.

Ø Bake for 25 minutes or until knife comes out clean.

Ø Makes 6-8 servings

Build your own Stir-fry with brown sauce

2 lbs meat of choice cubed
2 cans of waters chestnuts
1 can of bean sprouts
2 Tbsp oil
2 packages of brown gravy mix
3/4 cup soy sauce, separated 1/4 & 1/2 cup
1/2 cup water


1. Heat wok to medium, add oil and meat. Cook until cooked through.
2. Open vegetables and drain the liquid, set aside.
3. Drain fat from the meat, place back in the wok with vegetables, 1/2 cup of soy sauce.
4. In a measuring cup add 1/4 soy sauce and 1/2 of water, and brown gravy mix. Stir until it lumpy.
5. Reduce heat, add mixture and heat until it gets to a gravy consistency. If it gets to thick add a little water.


You can eat this by itself or with rice. You can also substitute whatever vegetables you would like. If you have an extra picky eater pour in gravy mix before the vegetables and get a serving of meat out before the vegetables.

Johnny's Apple Pie Pancakes

I made these with my little man this morning. We used a honey wheat pancake mix.



1 medium granny Smith Apple, cubed
1 serving of pancake mix, as directed on box
2 Tbsp sugar or sweetener
1 Tbsp of cinnamon
1 Tbsp vanilla extract


1. Preheat griddle, coat with butter or bacon grease
2. Mix up pancake batter add the vanilla extract.
3. In a large Ziploc mix together Apple cubes, cinnamon, and sugar. Shake the bag until they are coated.
4. Add the apples to the batter, mix together
5. They will be a nice Brown and smell great
